Koorkka Upperi Malayalam – നാടൻ കൂർക്ക ഉപ്പേരി – Koorka Mezhukkupuratti – Koorka or Chinese potato are small round tuber “potatoes”. It’s upperi is pleasant in flavor, with a moist and grainy texture mainly used in Kerala and Tamil Nadu. Cleaning koorka is a laborious task. In olden times, the skin was peeled by putting the koorka in a sack and beating it on the ground till the skin peels off. Koorka is tasty, but cleaning them is a hectic task.

Cleaning koorka is actually a time-consuming task and i follow the same old trick to peel off its skin. Koorka packed inside a gunny bag or sack is beaten against a rocky surface. When you open the bag, most of its skin will be out and now you have to put the koorka in water. Wash it thoroughly so as to remove the mud and other debris. Scrape and remove the left over skin with a sharp knife.

Cleaning koorka will stain your hands. So either wear gloves or wash your hands immediately using coconut oil, soap and a scrubber.

This stir fry requires few ingredients but when paired with rasam and steamed rice it turns into a delicious food. Koorka is widely found in parts of Asia, especially India, Sri Lanka and Malaysia. It is available in the winter season in Kerala for 3 months.

The texture is dense and has muddy skin. Koorkka is smaller in size and looks like small Colocasia. They are popularly used in Kerala dishes like Aviyal and Sambar. It’s fry is also a famous delicacy among Malayalis and Southindians. In Kochi and its surrounding areas like Angamaly, the Koorka is cooked with pork known as Koorka irachi. Koorkka Upperi can be prepared very easily, using very few ingredients and it’s a must try item.

Ingredients

  • Koorka - 1/2kg
  • Coconut Oil - 1 tbspn
  • Mustard - 1/2 tspn
  • Crushed dry Red chilly - 4
  • Curry leaves
  • Garlic Paste - 1/2 tspn
  • Water - 1 glass
  • Salt

Method

Step 1

Take a cooker and add 1 glass of water.

Step 2

Add 1/2kg Cleaned Koorka into it with a pinch of salt.

Step 3

Close it. And cook until 5 whistles.

Step 4

Take another pan and add 1 Tbspn Coconut oil into it.

Step 5

Add 1 tspn mustard , dried red chilly flakes, 1/2tspn garlic paste and curry leave to the hot oil.

Step 6

Then finally add the cooked koorka into the pan and mix well.

Step 7

Koorka upperi is ready to serve.
