Kovakka (Ivy Gourd) Curry is an authentic Kerala style recipe that goes well with Plain Rice. Even if it is a vegetarian curry, it tastes like a fish curry. Ingredients

  • Kovakka / Ivy Gourd - 1 cup ( cut length wise )
  • Green Chilly - 3 nos ( slitted )
  • Ginger - 1 small piece
  • Red Chilly Powder - 2 tsp
  • Turmeric Powder - 1/2 tsp
  • Grated Coconut - 1 cup
  • Kudampuli ( Gambooge ) - 3 pieces
  • Fenugreek Seeds - a pinch
  • Shallots - 4 nos ( cut into thin round slices )
  • Curry Leaves - 1 sprig
  • Water - 2 cup
  • Coconut Oil - 4 tbsp

Method

Step 1

Heat 2 tbsp of coconut oil in a clay pot or meen chatty. Add ivy gourd or kovakka, green chilly and ginger into it and saute until it turns soft.

Step 2

Add red chilly powder and turmeric powder into it and saute for one minute.

Step 3

Grind grated coconut and shallots to a smooth paste by adding 1/2 cup of water. Add this coconut paste into the cooked ivy gourd and mix well.

Step 4

Add kudampuli, salt and 1 1/2 cup of water to it and cook on a medium flame until the gravy thickens. Switch off the flame.

Step 5

For seasoning, heat oil in a pan and splutter fenugreek seeds. Then add shallots and curry leaves into it. Stir it until shallots turns brown. Pour this over the prepared curry.

Step 6

Tasty Kovakka Curry is ready.
