Mango Kulfi is a tasty and easy dessert. Kulfi was traditionally prepared by evaporating sweetened and flavoured milk via slow cooking with almost continuous stirring until its volume reduced by a half.

Mango Kulfi is a frozen creamy milk based dessert.ย You can add any mango puree while making this frozen dessert, though Alphonso work exceptionally well.ย This kulfi is creamy and rich and has full of mango flavour.

One cup of sliced mango supplies 25 percent of the daily needed value of vitamin A, which promotes good eyesight and prevents night blindness and dry eyes.ย The high levels of fiber, pectin and vitamin C help to lower serum cholesterol levels.

Ingredients

  • Milk - 250 ml ( 2 and 1/2 cups )
  • Mango pulp - 1 cup ( 200 gm )
  • Cornflour - 1/2 tsp
  • Sugar - 50 gm ( 1/4 cup )
  • Badam - 25 nos
  • Pista - 10 nos
  • Cardamom powder - 1/2 tsp
  • Pista ( crushed ) - 2 tsp for garnish
  • Condensed milk - 1/2 cup ( 100 ml )
  • Saffron - 3 strands
  • Water - 100ml

Method

Step 1

Soak badam and pista in 100 ml of water for 30 minutes and peel the skin. Then blend it along with a tsp of milk to a fine paste.

Step 2

Add saffron to 1 tsp of warm milk and set aside. Take 1 tsp of milk and cornflour and mix well. Peel ripe mango and cut into pieces. In a food processor puree mango.

Step 3

Heat a pan and add milk and sugar and let it simmer for 10 minutes until it is reduced. Then add condensed milk, saffron milk, cornflour mixture into it and stir for 5 minutes.

Step 4

Then add badam and pista paste, cardamom powder into it and simmer until it becomes creamy.

Step 5

Switch off and let it cool completely. Once cooled completely, add mango pulp and whisk it well so that there are no lumps.

Step 6

Pour it into popsicle moulds and close it with a lid or cover given along with the popsicle mould. Freeze for 6 hours.

Step 7

After 6 hours, run warm water on outside of the mould to loosen the pops.

Step 8

Garnish with crushed pista and serve immediately.

Step 9

Yummy Mango Kulfi is ready.
