This Mutton roast recipe is spicy and can be made with gravy by adding 1/2 cup extra water or coconut milk after the mutton is well cooked along with all masala. Method of cooking is very simple and easy.
As mutton is a high fat food item, remove excess fat before you cook the mutton. Tender cuts of mutton comes from Ribs and loin. I have used these parts for my mutton roast recipe.
Ingredients
- 1/2 kg mutton
- 2 tbsp garlic paste
- 1 tbsp ginger paste
- 1 big onion chopped
- 1 big tomato chopped
- 1 big potato chopped
- 3 green Chilli cut into half
- 10 curry leaves
- 1 tbsp red Chilli powder
- 1/2 tbsp black pepper powder
- 1 tbsp coriander powder
- 1/2 tbsp turmeric powder
- 1/4 tbsp garam masala
- 1/4 tbsp fennel seed powder
- Salt to taste
- 1 glass water
- 4 to 5 tbsp coconut oil
Method
Step 1
Mix all ingredients excluding oil.
Step 2
In a pressure cooker, cook in high flame until 2 whistle come from the cooker.
Step 3
After that reduce flame to lowest and cook for 15 minutes.
Step 4
Switch off the flame and keep the cooker lid closed for 10 more minutes.
Step 5
Meanwhile in a thick bottomed wok heat oil. Open the cooker and add mutton to wok.
Step 6
Fry till excess water is evaporated and the mutton roast thickens.
Step 7
Add 5 more curry leaves and serve hot with fried rice, steamed rice, roti or bread.
