No bake cheesecake with strawberry sauce topping is a simple cake recipe. This cake has a unique taste with the crunchiness of biscuits, strawberry and cheese. It can be baked or unbaked ( usually refrigerated ).

Cheesecake is usually sweetened with sugar and can be flavoured or topped with fruit, whipped cream, nuts, fruit sauce and chocolate syrup.

This is a special cake recipe which can prepare easily. You can amaze your guest for upcoming christmas, New year or birthday party with these tasty cakes.

Ingredients

  • Digestive biscuits - 150gm
  • Butter - 85gm (melted)
  • Powdered sugar - 2 tbsp
  • Cream cheese - 1 packet or 250 gram (at room temperature)
  • Whipping cream - 1 cup
  • Vanilla essence - 1 tsp
  • Lemon juice - 1 tsp
  • Sugar - 1/4 cup (grinded)
  • Sugar - 1/3 cup
  • Cornstarch - 1tsp
  • Water - 1/3 cup
  • Red food colour - 1 pinch
  • Fresh strawberries - 2 cups

Method

Step 1

Crush the digestives biscuits either in a plastic bag with a rolling pin or in a processor.

Step 2

How to melt butter: Heat a pan and add the butter to the pan then melt the butter for 30 seconds

Step 3

Then add 2 tbsp of sugar and melted butter to the crushed biscuits mixture and mix well.

Step 4

Take a 5 inch flat bottomed round vessel. Add the biscuit mixture and press with the back of a spoon to cover the base of the vessel. Make it cool using a refrigerator for 15 minutes.

Step 5

Whip the cream until peaks form. Add the sugar and lemon juice to the cream cheese. Mix well until the cream cheese no longer has any lumps and the sugar is completely dissolved.

Step 6

Once the cream cheese is smooth add the whipped cream into the cream cheese.

Step 7

Add the vanilla essence. Using a whisk, mix until the mixture is smooth and thick. You can use an electric or hand mixer, but be careful not to be over beat it as the whipping cream might curdle.

Step 8

Spread this mix evenly on the top of the biscuit base.

Step 9

Place this in the fridge for 1 hour. (Do not put in freezer)

Step 10

To prepare strawberry sauce, chop the strawberries into small pieces.

Step 11

Then take a bowl, mix water and corn starch until dissolved.

Step 12

Heat a pan add thechopped strawberries, corn starch mixture and sugar. Cook for 5 minutes. Switch off the flame.

Step 13

Pour this into a blender and blend until smooth.

Step 14

Finally add the vanilla essence and some drops of red food colour.

Step 15

Once the cheese cake set well, decorate on top with strawberry sauce.
