Olan is one of the simplest vegetarian recipe. This is another must dish during Sadyas, grand festival feast of Kerala, South India. Olan is prepared with red cow peas (van payar), ash gourd (kumbalanga) and pumpkin (mathan). Olan is a less spicy dish and every one enjoys it. Olan tastes delicious with the nice flavour of coconut. Cow peas also adds more taste to this simple mild dish.

Ingredients

  • Red cow peas (van payar) - 1/2 cup
  • Ash gourd (kumbalanga) - 1 cup
  • Pumpkin (mathan) - 1 cup
  • Green chilies - 5 nos
  • Thick coconut milk - 1 cup
  • Salt to taste
  • Water - 2 cup
  • Curry leaves - 2 string
  • Coconut oil - 2 tsp

Method

Step 1

Soak the red cow peas in water over night. Pressure cook or boil the cow peas for 4 minutes.

Step 2

Chop the pumpkin and ash gourd into small pieces after removing the skin.

Step 3

Take a pan add half cooked red cow peas, pumpkin, ash gourd, salt, green chilies, water and cook for 3 minutes.

Step 4

Once the vegetables are cooked add thick coconut milk to the vegetables and heat for 2 minutes.

Step 5

Season the curry with coconut oil and curry leaves and heat for 1 minute. Naadan Olan is ready to be served.
