Palakkadan Sambar ( പാലക്കാടൻ സാമ്പാർ ) is something different from other sambar because it is made with freshly ground spices & coconut. It makes the taste a unique.

Ingredients
- Toor dal (thuvara parippu) - 1/2 cup
- Turmeric powder - 1/4 tsp
- Tamarind - a small lemon size (dissolved in 1 cup of water)
- Drumstick - 2 nos
- Tomato - 1 no
- Ladies finger - 4 nos
- Ash Gourd (Kumbalanga) - a small piece
- Small onions (Kunjulli / Cheriya ulli) - 5 nos
- Potato - 1 nos
- For dry roasting: - Coconut grated - 1/2 cup
- Coriander seeds - 1 tbsp
- Whole red chilly - 6 nos
- Fenugreek seeds (uluva) - 1/4 tsp
- Asafoetida powder (kaayam) - 1/2 tsp
- Curry leaves - 5 nos
- For seasoning: - Mustard seeds - 1 tsp
- Whole red chilly - 3 nos
- Curry leaves - few
- Coriander leaves - few
- Coconut oil - 3 tsp
- Water - 4 cup
- Salt to taste
Method
Step 1
Heat 1 tsp of coconut oil in a non stick pan and add whole red chilly, coriander seeds , fenugreek seeds and let it fry well. Add grated coconut and Keep frying till the coconut becomes a rich dark brown colour. Add asafoetida powder and curry leaves and fry for 2 minutes. Switch of the flame. Let it cool completely and then grind it to a smooth paste. Coconut paste is ready.
Step 2
Clean and cut all the vegetables.
Step 3
Boil the toor dal with the tomato, 2 cups of water and optionally 2 cloves of garlic. You can cook it using the pressure for 3 whistles.
Step 4
Then open pressure cooker and add drumstick, tomato, Ladies finger, ash gourd, small onions, potato and cook for 5 minutes.
Step 5
Add salt and 1 cup of water to the cooked dal and cook till the veggies are slightly cooked.
Step 6
Soak the tamarind in 1 cup of water and make a pulp. Add the tamarind pulp to the dal and the vegetable mix and stir well.
Step 7
After that add coconut paste to this and mix well and cook for again 5 minutes.
Step 8
Heat coconut oil in a pan and splutter mustard seeds. Add dry red chilly, coriander leaves & curry leaves and add into sambar and switch of the flame.
Step 9
Tasty Palakkad Style Sambar With Coconut is ready.
Step 10
Serve it with hot rice, idli, dosa, chapati, etc.
