Panineer Petti Recipe / പനിനീർ പെട്ടി is a traditional Malabar snack recipe. Panineer Petti is simply stuffed pancakes which are delicious and very tasty. It can be served as iftar snack too.
It has a nice aroma and flavor of panineer which means rose flower, is the specialty of this recipe. I have used rose essence for the flavor and aroma. The pancakes are prepared using all purpose flour, milk and eggs. It make a delicious snack with the sweet filling made with cashews, raisins and sugar.

Ingredients
To prepare the filling, beat eggs with sugar and cardamom powder in a bowl. Heat ghee in a pan, fry cashew nuts and raisins . Add the beaten eggs and scramble it and keep it aside. In a bowl, add plain flour, egg, salt, milk and make a thin batter without any lumps and keep it aside. Prepare the sugar syrup by boiling sugar, rose water, cardamom powder and water till it becomes little thick and keep it aside. Heat a non stick pan and make thin pancakes. Place a small portion of the filling in its center. Fold one side of the pancake to the center. Seal the pancake by folding the opposite side to the center. Fold the other two sides so that it resembles an envelope. Prepare another pancake, add a small portion of the filling in its centre and place the first pancake box already prepared in the centre and fold the pancake again like an envelope. Make a slit at the center of the pancake box and add sugar syrup. Tasty Panineer Petti is ready.Method
