Payar Ela Thoran / Long Bean Leaves Stir Fry / Kerala Side Dish Recipe / പയറില തോരൻ is a quick and simple dry vegetarian side dish made with the leaves of long beans which are highly nutritious and good for health.

Long Bean Leaves are good for digestive organs, reduces the risk of Stroke and Heart Attack, treat Hypertension, Urinary Tract Disorders, Dengue Fever, Arthritis, Back Pain etc.

Ingredients

  • Tender Long Bean Leaves (Payar Ela) - 3 cup
  • Grated Coconut - 1/2 cup
  • Dry Red Chilly - 4 nos (chopped)
  • Shallots - 1/4 cup (chopped)
  • Turmeric Power - 1/4 tsp
  • Mustard Seeds - 1 tsp
  • Coconut Oil - 3 tbsp
  • Salt to taste

Method

Step 1

Wash the long bean leaves (payar ela) with water and chop it into small pieces.

Step 2

Heat oil in a pan and splutter mustard seeds. Add chopped shallots and red chillies into it and saute for 3 minutes.

Step 3

Add grated coconut, chopped long bean leaves (payar ela), turmeric powder and salt into it and mix well.

Step 4

Cover it with a lid and cook on a low flame.

Step 5

Open the lid and cook for another 3 minutes or until it is dry.

Step 6

Switch off the flame.

Step 7

Tasty Payar Ela Thoran is ready.
