We don’t have to wait for any seasons for pineapple, as it is readily available in the market at any time. Pineapple contains vitamin A and C, fiber, potassium, phosphorous and calcium. Ingredients

  • Pineapple - 2 cups (chopped)
  • Ginger - a small piece (chopped)
  • Green Chilly - 4 nos (chopped)
  • Garlic - 8 cloves (chopped)
  • Kashmiri red chilly powder - 2 tsp
  • Mustard seeds - 1/2 tsp
  • Fenugreek powder - 1/2 tsp
  • Asafoetida powder -1/3 tsp
  • Curry leaves - 2 sprigs
  • Sugar - 1 tsp
  • Vinegar - 3 tsp
  • Salt to taste
  • Gingelly oil - 3 tbsp

Method

Step 1

Clean and cut pineapple into small pieces.

Step 2

Take a bowl and add pineapple pieces, sugar and salt. Mix well and keep it aside for 10 minutes. After 10 minutes strain out the liquid into a separate bowl. Keep it aside.

Step 3

Heat a pan and pour gingelly oil and add mustard seeds when the oil gets hot. When they splutter, add chopped garlic, curry leaves, chopped green chilly, chopped ginger. Saute till the raw flavor disappears.

Step 4

Reduce the flame and add kashmiri red chilly powder, asafoetida powder, fenugreek powder and mix well.

Step 5

Add pineapple pieces, pineapple juice and vinegar. Mix well for 3 minutes. Switch off the flame and allow to cool.

Step 6

Tasty Pineapple Pickle is ready.
