Rava idli is a variation of the popular South Indian breakfast item. This is a quick, easy and tasty version of idli made with Rava (semolina / suji). You can make this idli colorful and nutritious by adding carrots, cabbage, beans or any vegetables that you like to the batter.

Ingredients
- Rava or Semolina - 1 cup
- Curd - 1/2 cup
- Water - 3 tbsp
- Baking soda - a pinch
- Green chilly - 2 nos
- Ginger - 1/2 inch piece ( chopped )
- Cashew nuts - 5 nos
- Ghee - 3 tsp
- Mustard seeds - 1/4 tsp
- Chana dal - 1/2 tsp
- Urad dal - 1 tsp
- Vegetable oil - 3 tbsp
- Salt to taste
Method
Step 1
Heat 3 tsp ghee in a pan. Add the rava and roast in the ghee in low flame till they become aromatic and change color. Remove the roasted rava in a mixing bowl and keep aside.
Step 2
In the same pan, heat 1 tsp oil again and fry the cashews. Add the fried cashew nuts to the rava in the mixing bowl.
Step 3
Heat 1 tsp oil in a pan and add mustard seeds. When the mustard seeds splutter then add chana dal and fry till the chana dal become golden. Add this to the roasted rava.
Step 4
Add curd along with chopped ginger, baking soda, cashew nuts, green chilies and salt. Add water as required and make a batter which is neither thin nor thick.
Step 5
Keep aside covered for 30 minutes. After 30 minutes, if the batter looks thick, then add a few tablespoons of water to get a medium consistency.
Step 6
Grease the Idli plates. Add spoonful of the batter to each of the idli plates.
Step 7
Heat water in a pressure cooker and place the idli stand in a pressure cooker and cook covered without the whistle for 10 minutes. Switch off the flame. Remove the rava idlis from the mould.
Step 8
Tasty Rava Idli is ready.
