Sharkara Pazhampori | Jaggery Banana Fritters

Pazhampori or Ethakka Appam is a traditional Kerala delicacy made out of special variety of plantain called Ethapazham / Nendrapazham. It is a simple, quick and scrumptious tea time snack which is an all time favourite of Malayalees.

Banana is rich in dietary fiber, potassium, and vitamins B6 & C. It also provides minerals like copper, magnesium and manganese. Recent studies revealed that it can prevent replication and transmission of HIV-infected cells. Also it can reduce the risk of developing Childhood Leukemia.

Ingredients

  • Ethapazham / Nendrapazham / Ripe Plantain - 1/2 kg
  • Ponni Rice - 1/2 glass
  • Jaggery - 1 lemon size ball
  • Maida - 4 tsp
  • Palayankodan Banana - 3 nos (mashed with hand)
  • Water - 1/4 cup
  • Coconut Oil - 3 cup (for frying)
  • Salt to taste

Method

Step 1

Clean and soak ponni rice in water for 5 hours and then grind to a fine paste.

Step 2

Melt jaggery in 1/4 cup of water.

Step 3

Take a bowl and add melted jaggery, maida, palayankodan banana, salt and ground ponni rice. Make it into a semi thick batter without any lumps.

Step 4

Slice Ethapazham / Nendrapazham / Ripe Plantain into thin slices. Dip the slices of banana in the batter and coat it very well.

Step 5

Heat coconut oil in a deep pan and add the banana slices into it and fry both sides. Remove it from oil and drain the excess oil with tissue paper.

Step 6

Tasty Jaggery Pazhampori is ready.
