Super easy Egg Roast recipe!! It is spicy and yummy. It goes very well with Appam (rice bread-like dish) and Putt. It is also a great accompaniment for chapatti, Paratta, boiled rice etc
Ingredients
- Boiled eggs - 3
- Big Onions - 4 finely chopped
- Big Tomato - 2 finely chopped
- Green Chilli - cut into half
- Curry leaves - 10
- Kashmiri chilli powder - 2 Spoon
- Turmeric powder - 1/2 tspn
- Mustard seeds - 3 Pinch
- Coconut oil - 4 tbspn
- Water - 1/4 Cup
- Salt to taste
Method
Step 1
Heat oil in a pan and splitter mustard seeds.
Step 2
Then add onion and sauté well. Once onions are sautéd well add tomato, green chilli and curry leaves.
Step 3
When the above ingredients become a thick paste add chilli powder, turmeric powder and salt to taste.
Step 4
Stir for 2 more minutes and add 1/4 cup water and allow the curry to boil.
Step 5
To this add boiled eggs (you can add egg piece or full egg) and cook for 5 minutes so that the water evaporates and curry becomes your desired consistency.
Step 6
The spicy and easy egg roast cooking is completed. Then switch of the flame. Tip: For extra flavour, Switch of the flame and add 1 spoon of coconut oil and sprinkle some curry leaves on top. Serve hot.
