Here is a simple and spicy egg recipe from my kitchen!!!
Spicy Egg Tomato Stir Fry is one of my favorite egg recipe because of its easiness to prepare. This egg tomato stir fry along with a vegetable ozhichu curry (gravy) makes a perfect meal for me. Also, you can make spicy egg tomato bread sandwich or you can fill this spicy fry masala in a chapatti (Indian bread) and wrap it to make a delicious rich snack for your kids.
If you want you can also add grated coconut and enhance the flavor of the dish.

- Egg - 3
- Coconut Oil - 2 tbspn
- Onion finely chopped - 1 big
- Green chilly finely chopped - 2
- Tomato finely chopped - 1 big
- Curry leaves - 5 to 6
- Turmeric powder - 1/2 tspn
- Red chilly powder - 1/2 tspn
- Garam masala powder - 1/4 tspn (I used Eastern Garam masala powder)
Whisk the eggs adding a pinch of salt.
Heat oil in a pan, add chopped onions and add a pinch salt and saute till it turns translucent. Note - Adding salt at this stage make the onion fry quicker.
Now add chopped tomatoes, chopped green chilies and curry leaves. Saute until the tomato blends well.
Add turmeric powder, red chilly powder and garam masala powder one by one. Saute until the raw smell of the curry powders goes off.
Now add the whisked eggs and scramble it. Add required salt. Scrambling depends on how you like your eggs - if you want larger egg pieces then after pouring the egg mixture give some time to set and then scramble. Or else to get smaller egg pieces continue scrambling the eggs until the eggs cook completely. Note: If you have already added salt while whisking the eggs, then add salt accordingly.
After scrambling cook for 2 more minutes and remove from heat. Spicy egg tomato stir fry is ready!!!
