Sweet Cheeda is a tasty snack & very famous in Kerala.  It is one of the easiest Kerala evening snack recipe.

This is one of the snacks, that Kerala Christians make during Christmas time and can be stored for almost a month.

It can be served as a teatime snack or nalumani palaharam with a cup of tea. By serving this sweet item can surprise the guests.

Ingredients

  • Rice flour - 1 1/2 cup
  • Grated coconut - 3/4 cup
  • Sesame seeds - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Sugar - 1 cup
  • Coconut oil - 2 cup
  • Salt to taste
  • Water - 1 cup

Method

Step 1

Roast the rice flour in a non stick pan for 4 minutes. Allow it to cool.

Step 2

Roast the grated coconut in pan without oil until the water evaporates. Grind the coconut to a coarse paste.

Step 3

Mix rice flour, salt, coconut, cumin seeds and sesame seeds and water to form a stiff dough. Keep it aside for 15 minutes.

Step 4

Heat 1 cup of water in a pan and add 1 cup of sugar. Boil the mixture until the syrup reaches a medium thick consistency.

Step 5

Make small balls from the dough. Flatten it out with both palms until it is around 2 inch in size.

Step 6

Mark an impression with fork on this and roll in so that the impression is outside the roll. Continue the same with all the balls .

Step 7

Heat oil in a pan and add the cheeda pieces. Fry it untill the pieces turn golden brown.

Step 8

Remove the pieces and place it on a paper towel so that the oil is absorbed.

Step 9

Add the pieces to sugar syrup and keep it for 2 minutes. Take out the pieces from sugar syrup and allow it to cool.

Step 10

Tasty Sweet Cheeda is ready.
