Uluva Kanji Recipe | ഉലുവ കഞ്ഞി

Uluva Kanji Recipe is an easy version of karkkidakam kanji which is prepared mainly in the malayalam month of Karkkidakam (July 16th – August 15th). It is a very healthy and delicious porridge. It is also considered as good for diabetes patients.

The main ingredient of uluva kanji is uluva (fenugreek, also known as methi seeds). Fenugreek need to be soaked in water overnight. Fenugreek help to reduce the body’s absorption of cholesterol from fatty foods. Uluva Kanji is considered as a good medicinal food to keep good health.

Ingredients

  • Raw rice (Pachari) - 1 cup
  • Uluva (methi seeds/fenugreek) - 2 tbsp
  • Water - 4 cups
  • Cumin seeds (nalla jeerakam) - 1/2 tsp
  • Shallots - 5 nos
  • Grated coconut - 1/2 cup
  • Salt to taste

Method

Step 1

Soak the uluva (fenugreek) in water overnight. Wash and soak raw rice (Pachari) in water for half an hour.

Step 2

Add rice, water and uluva to a pressure cooker. Pressure cook for 10 minutes until done on a medium heat. Allow to cool. Open the lid and gently mash cooked rice and uluva with the base of a ladle.

Step 3

Grind coconut, shallots and cumin seeds to a smooth paste.

Step 4

Add the grated coconut paste into the cooked rice. Mix well. Add salt and cook again for 3 minutes. If Kanji is too thick add little more hot water. It should be of pouring consistency.

Step 5

Tasty Uluva Kanji is ready.
