Urulakizhangu Koorka Stir Fry is a tasty vegetable stir fry, I tried this recipe at my kitchen for the first time and i realized that it is a variety combination. You can also prepare this recipe so fast with less ingredients and less time.
Koorka is enriched with calcium, iron and valuable vitamins which are essential for man’s health. Koorka is still considered as a poor man’s delicious dish. It is a seasonal vegetable yet popular in Kerala. It is a rich source of calcium, vitamin A and iron.

Ingredients
- Koorka ( Chinese Potato ) - 250 gm
- Potato ( Urulakizhangu ) - 250 gm
- Garlic - 2 cloves
- Turmeric powder - 1/4 tsp
- Shallots - 10 nos ( crushed )
- Dry red chilly - 8 nos ( crushed )
- Coconut oil - 4 tbsp
- Curry leaves - 2 sprig
- Water - 100 ml
- Salt to taste
Method
Step 1
Wash and peel the potatoes. Slice potatoes into thin long strips.
Step 2
Wash, clean, and cut the koorka into long thin slices,
Step 3
Heat a pan, add koorka, potato, 100 ml of water, turmeric powder and salt. Cover it with lid and cook for 10 minutes on a low flame. Open the lid and if there is excess water uncover it and keep on low flame, so that the water evaporates. Switch off the flame.
Step 4
Now crush shallots and dry chilly together.
Step 5
Heat 4 tbsp of coconut oil in a pan and saute the shallot and dry chilly mix along with curry leaves until the raw smell goes.
Step 6
Now add the cooked koorka and Urulakizhangu into this and mix everything well.
Step 7
Cook it for 2 minutes and mix slowly till all the pieces are well coated with the shallot and dry chilly mix. Switch off the flame.
Step 8
Delicious Urulakizhangu Koorka Stir Fry is ready.
