Vaazha koombu thoran | Banana flower stir fry

Vaazha koombu ( Kodappan കൊടപ്പൻ  /വാഴകൂമ്പ്  in Malayalam) or Banana Flower is also commonly used as vegetables for cooking. Banana flowers have abundant uses in the kitchen including making soup, vegetable stews and salads.

 This thoran is a delicious stir-fry which is usually served as side dish with rice and is a traditional dish in Kerala.

Banana flower is covered with Vitamin A and C and also have properties which helps in reducing heart diseases, reduce cholesterol, anti-aging etc. Banana Flowers are packed with tremendous nutritional value and being a good source of fibre and protein. 

Cleaning Banana Flower can be quite time consuming but it is worth the effort.

Ingredients

  • Vaazha koombu ( Kodappan / Banana flower )- 1 no
  • Turmeric powder - 1/4 tsp
  • Red chilly powder - 1/4 tsp
  • Grated coconut - 1/2 cup
  • Coconut oil - 4 tsp
  • Mustard seeds - 1/4 tsp
  • Curry leaves - 2 sting
  • Dry red chilly - 2 nos
  • Kerala red rice (kuthari rice) - 2 tsp
  • Salt to taste

Method

Step 1

Remove couple of dull petals of vaazha koombu or remove the florets till you see soft and pale colored edible part inside.

Step 2

Chop the vaazha koomb and wash well with water to remove stains and squeeze out any excess water.

Step 3

Mix vaazha koombu with 1 tsp coconut oil, turmeric powder and salt.

Step 4

Heat oil in a pan and splutter mustard seeds, Kerala red rice, dry red chilies and curry leaves.

Step 5

Add chopped vaazha koombu and grated coconut. Mix well and adjust salt.

Step 6

Cover and cook in a low flame for 10 minutes. Remove the lid and stir well. Cook until the mixture is dry.

Step 7

Tasty vaazha koombu thoran is ready.
