Payasam is kerala’s own dessert. There are varieties of payasam. We can prepare payasam also with vegetables and fruits. Here I am preparing payasam with vegetables. Vegetable payasam is indeed a rich and healthy payasam.
I am using potatoes and carrots for preparing vegetable payasam. You can also try with other vegetables too. Boiled potatoes and carrots are made into paste. Almonds and cashews makes the payasam more richer and yummy.

Tips:
- You can use the water left after boiling the vegetables for making soups or any other dishes.
- Add a little sugar or honey while boiling carrots to enhance its sweetness.

Ingredients
Peel out the skin of potatoes and carrots and wash well under water. Cut in to small pieces. Cook the vegetables and grind into paste. Soak the almonds and 10 cashew nuts in hot water for 5 minutes. Remove the almonds and grind with the cashew nuts and keep aside. Heat ghee in a flat-bottomed pan, roast the remaining cashew nuts and and coconut pieces and keep aside. Boil the jaggery in a little water and strain to remove impurities.
To the same ghee, add strained jaggery, almonds, cashew nut paste and vegetable paste and stir it continuously. Add the milk and condensed milk. When the mix begins to boil, remove from the flame. Sprinkle the cardamom powder and mix well. Garnish with roasted cashew nuts and coconut pieces. Tasty Vegetable Payasam is ready. Vegetable Payasam can be served cool or hot.Method
