Aval Ladoo Recipe

Aval Ladoo is a simple and tasty snack. The main ingredients of this ladoo is aval / rice flakes / poha, coconut and jaggery. This can be served as an evening snack or Nalumani Palaharam and kids will love this healthy snack.

Aval is the malayalam word for beaten rice, poha or rice flakes. The ladoo made with beaten rice flakes are a good sources of prebiotic and probiotic food and is rich in fiber and Vitamin B complex.

Rice flakes or flattened rice is made by removing the husk from rice which is then flattened into flat light dry flakes. They can be eaten both raw and cooked and are very easily digestible.

Beaten rice is healthier than other carbohydrate options. Carbohydrates are the major source of energy in a bowl of aval. This makes it a perfect breakfast option. Aval is considered to be a great meal option for diabetics as it promotes slow release of sugar into the bloodstream.

Ingredients

  • Aval / Rice Flakes / Poha – 2 cups ( 250 gm )
  • Jaggery - 1 cup ( 150 gm )
  • Grated coconut - 150 gm
  • Ghee - 3 tbsp
  • Cardamom Powder - 1/4 tsp
  • Cashew nuts - 10 nos
  • Raisins - 10 nos
  • Coconut pieces - 1 tbsp

Method

Step 1

Heat a non stick pan, add rice flakes and roast it for 5 minutes on low flame. Keep it aside.

Step 2

In the same pan roast grated coconut on low flame for 3 minutes. keep aside.

Step 3

Crush roasted rice flakes, grated coconut and jaggery using a mixer or food processor.

Step 4

Heat a non stick pan, add 2 tbsp of ghee and fry coconut pieces, raisins and nuts. Keep this aside.

Step 5

Take a bowl, add aval mixture, cardamom powder, coconut pieces, raisins, cashew nuts and combine well with your hands.

Step 6

Grease your hand with 1 tsp of ghee and take a small portion of the mixture and shape it to a round ball.

Step 7

Prepare Aval ladoos with the rest of the mixture.

Step 8

Tasty Aval Ladoo is ready.
