The bright color of beetroot gives a nice appearance for deviled eggs. Eggs are a good source of proteins. It is healthy and good for health. More over adding vegetable enhance the nutrient content of the food.

We want hard boiled eggs for this recipe. While preparing hard boiled eggs, add eggs into water and boil it.ย The water should come to a full, rolling boil.ย ย As soon as the water comes to a boil, remove the pan from heat and cover the pan. For hard boiled eggs, keep the eggs in the pan for 15 minutes.

Ingredients

  • Beetroot - 1 no ( cleaned,peeled and diced )
  • Hard boiled eggs - 2 nos ( peeled )
  • Mustard - 1/4 tsp
  • Black pepper powder - 1 pinch
  • Water - 1 cup
  • Salt to taste

Method

Step 1

Pressure cook beetroot pieces with water for 5 minutes. Let it cool to room temperature.

Step 2

Grind the cooked beetroot in a grinder.

Step 3

Cut eggs in half, lengthwise. Add all yolks to the grinded beetroot. Add mustard and mash it all together again. Add salt and pepper to taste.

Step 4

Spoon the beetroot mixture back into the deviled eggs.

Step 5

Beetroot Deviled Eggs is ready to serve.
