Iftar Snack Recipe

Biskeemiya is a unique Maldivian food which comes from a pastry made with the tuna and also egg filling. The filling consists of smoked tuna, Chinese capsicum, curry leaves, onion, black pepper, cabbage, boiled egg and salt. Then the dough is made of flour, salt, vegetable oil and warm water which will be fried in hot oil.

It is a very simple recipe and it is a combination of cabbage and boiled eggs. You can serve this as Iftar or Nombuthura Dish for Ramadan.

Ingredients

  • For Dough: - All purpose flour / Maida - 1 1/2 cup ( 250 gm )
  • Lukewarm water - 1/2 cup ( 100 ml )
  • Vegetable oil - 2 tbsp
  • Salt to taste
  • For Filling : - White cabbage - 1 cup ( 200 gm ) ( chopped )
  • Boiled eggs - 2 nos ( chopped )
  • Onion - 1 no ( chopped )
  • Green chilly - 4 nos ( chopped )
  • Lime juice - 1 tbsp
  • Curry leaves - 5 nos ( chopped )
  • Vegetable oil - 200 ml ( for frying )
  • Salt to taste

Method

Step 1

Take a bowl and add all purpose flour, salt, oil, lukewarm water and knead well to make a soft dough.

Step 2

By using the dough, make small sized balls (lemon sized). Roll this balls in the shape of chapati.

Step 3

For the filling: - Take a bowl and add chopped onions, cabbage, lime juice, salt and mix with your hands till it gets soft. Add green chilly into it and mix again. Finally add egg to it and again mix with a spoon. The filling is ready.

Step 4

Place 2 tbsp of filling on the center of the dough. Fold both the sides and the ends, use little water to glue them. It will be like square shaped box. Like this, prepare all the boxes.

Step 5

Heat vegetable oil in a pan and deep fry the stuffed boxes until it turns golden brown. Flip over and fry the other side too.

Step 6

Place them on a tissue paper to drain excess oil.

Step 7

Tasty Biskeemiya is ready.
