Caramel custard is an easy dish to prepare and does not take lot of time. This easy-to-make pudding is popular all over India but made especially well by the Parsis, Mangaloreans (both from Western India) and the Anglo-Indians. Caramel custard is made of milk and has a soft layer of caramel on top. It can be steamed in a pressure cooker or baked in the oven.
Caramel custard is an all time favorite dessert liked by one and all. This custard is prepared with just few ingredients like the milk, eggs, sugar, vanilla essence and caramel. Caramel is a confection that is beige to dark brown in color prepared by the caramelization of sugar. Caramel is used to flavor puddings, desserts and beverages, such as Coca-Cola. Caramel is also used as a food colorant. Caramel is made by heating sugar slowly to around 170ºC / 338ºF. As the sugar melts and approaches this temperature, the molecules break down into volatile compounds with a characteristic caramel color and flavor.
Try this delicious homemade caramel custard at your home!
- Milk - 500 ml
- Eggs - 3 nos
- Custard powder - 2 tbsp
- Sugar - 1 cup
- Water - 5tsp
Heat a pan add 3 tablespoons of sugar and melt until golden brown. Remove from heat and set it aside. Pour the caramel in to a mould.
Take a bowl add custard powder in 3/4 cup of milk in room temperature without lumps. Bring the remaining milk to boil adding the rest of sugar.
Stir in the custard powder milk mixture carefully keeping the fire low taking care not to form any lumps until well blended. Remove from fire. Stir in lightly whisked eggs.
Cool the mixture and fill it into the mould with caramel. Cover them with butter paper tied around the mouths. Steam in medium heat for 15 minutes.
Remove, chill and serve. Decorate with fruits.
Delicious Caramel Custard Dessert is ready to serve.
