Carrot Beetroot and Orange Soup Recipe – Simple & Healthy Soup
Carrot Beetroot and Orange Soup is a tasty and healthy soup. The beetroot provides the colour and the carrots and orange all contribute to the superb flavour. This is a vegetarian soup recipe which is very delicious and easy to make.
Beets are great source of vitamins, minerals, antioxidants and dietary fiber. Beetroots are rich in vitamin C, manganese, folate, vitamin B6, betaine and potassium.
Carrots are one of the most widely used and enjoyed vegetables in the world. Most of the benefits of carrots can be attributed to their beta carotene and fiber content.
Orange is a popular fruit because of their natural sweetness, wide variety of types and diversity of uses from juices and marmalades to face masks and candied orange slices. As an excellent source of the strong antioxidant vitamin C, oranges can also help to combat the formation of free radicals known to cause Cancer.

Ingredients
- Carrots - 2 nos
- Beetroot - 1 no ( small )
- Orange Juice - 250 ml
- Cinnamon stick - 1 no
- Star anise - 1 no
- Pepper powder - 1 pinch
- Water - 200 ml
- Olive oil - 1 tbsp
- Parsley leaves - 1 tbsp ( garnishing )
- Salt to taste
Method
Step 1
Clean the beetroot, carrots and cut into small pieces.
Step 2
Heat a pan and add chopped beetroot pieces, carrot pieces, water, cinnamon stick, star anise and cook for 10 minutes on a low flame or until they become tender. Allow to cool.
Step 3
Take a blender and add cooked beetroot, carrots, cinnamon stick, star anise, orange juice and blend well.
Step 4
Strain and add salt and pepper into it. Chill for 20 minutes and top with olive oil and parsley leaves.
Step 5
Tasty Carrot Beetroot and Orange Soup is ready.
