Chakka varatti / Jackfruit Preserve / Jackfruit Jam

Chakka Varatti is basically a method to preserve the Jackfruit which is made when jack fruits are lavishly available in season. Jackfruit is a seasonal fruit and it grows more in almost all parts of Kerala. So people preserve them for off-season by preparing this Chakka Varatti. Jackfruit is very delicious and it is used in making different dishes in Kerala.

Jackfruit is an excellent source of Vitamins and has good health benefits. And this Chakka Varatti or Jackfruit Jam / Preserve is also rich in nutrients and other proteins.

Chakka Varatti is Kerala’s traditional dish  and made using ripe jack fruit which is cooked first, ground to a smooth paste and mixed with jaggery and cooked till it becomes a thick consistency, almost like a jam.

Chakka Varatti or Jackfruit Preserve can be eaten along with bread, chapati etc., We can also make payasam or ada ( rice batter ) using this Chakka Varatti.

Ingredients

  • Ripe Jackfruit ( Chakka ) - 500 gm
  • Jaggery ( Sharkara ) - 200gm
  • Ghee - 1/2 cup
  • Dry ginger ( Chukku ) powder - 1 tsp
  • Cardamom (Elakka) Powder - 1 tsp
  • Water - 1 cup
  • Nuts - 10 nos

Method

Step 1

Separate the seeds from the ripe jack fruit pieces.

Step 2

Add the jack fruit pieces in a mixer and grind it to a smooth paste.

Step 3

Heat a pan and add melt jaggery with a cup of water. When it melts remove from flame and strain with a strainer. This helps to remove the impurities in the jaggery.

Step 4

Heat Uruli or a heavy bottomed pan and add Jackfruit paste and stir well.

Step 5

Pour the melted jaggery into the Jackfruit pulp and cook them together in a low flame for about 30 minutes. Keep on stirring till all the water is evaporated.

Step 6

Add ghee little by little, chukku powder and cardamom powder.

Step 7

Stir continuously in a low flame. If it is sticking to the bottom of the pan add ghee.

Step 8

Without taking your hand, stir continuously until ghee separates from the sides. Remove the pan from heat and keep it aside.

Step 9

Take a pan and add 1 tsp of ghee and roast the nuts. Garnish with roasted nuts.

Step 10

Let it cool store in air tight containers. It can be preserved for more than a year.

Step 11

Tasty Chakka Varatti or Jackfruit Preserve or Jackfruit Jam is ready. This can be eaten along with bread ,chapati or to make Chakka Ada.
