Coconut Rice is a typical dish that is sure to be relished by all those who like the rich, creamy flavour and texture of coconuts. It is a blend of rice, coconut milk and spices.

Coconut Rice is a traditional rice preparation of south India. This Coconut Rice would make for an interesting vegetarian dish. Serve hot with any meat curry of your choice.

Ingredients

  • Matta rice / Parboiled rice - 2 cups ( 200 gm )
  • Coconut - 1 no
  • Onion - 1 no
  • Coriander powder - 1/2 tsp
  • Turmeric powder - 1/2 tsp
  • Fennel seeds - 1/4 tsp
  • Black pepper - 5 nos
  • Cardamom - 2 pods
  • Clove - 2 pods
  • Cinnamon sticks - 1 inch piece
  • Ghee - 2tbsp
  • Water - 4 cup ( for preparing coconut milk )
  • Salt to taste

Method

Step 1

Grate the coconut and prepare 4 cups of coconut milk from it.

Step 2

Wash the rice 3 times with water.

Step 3

Heat a pressure cooker and add ghee and thinly sliced onions and saute for 3 minutes.

Step 4

Add coriander powder, turmeric powder, fennel seeds, black pepper, cardamom, clove and cinnamon sticks into it and saute for 3 minutes.

Step 5

Add rice, coconut milk, salt into it and close the cooker lid. Once the steam starts from the pressure cooker, put the cooker weight.

Step 6

After 1 whistle, simmer the flame and cook for 10 minutes. After 10 minutes, switch off the flame.

Step 7

Open the cooker and check, the water should be fully absorbed.

Step 8

Tasty Coconut Rice is ready.

Step 9

Serve hot with Chicken or Beef curry.
