Here is another superr easy vegetable curry from my kitchen. Just cut the vegetable and cook it with a few basic ingredients and the spicy curry is ready. Is that so easy?

Ingredients

  • Brinjal - 1/2 kg chopped into small pieces
  • Big Onion - 1 finely chopped
  • Tomato - 1 Big chopped
  • Green Chilly - 2 finely chopped
  • Curry Leaves - 6 or 7
  • Turmeric powder - 1/2 tspn
  • Red Chilly powder - 1 tspn
  • Coriander powder - 1 tspn
  • Oil - 3tbspn
  • Mustard - 1/2tspn
  • Salt

Method

Step 1

Heat oil in a pan. Add mustard seeds. Once spluttering is complete add onion,green Chilly and tomato and some curry leaves.Saute for 3 min.

Step 2

Then add turmeric powder,red chilly powder and corriander powder. saute for 1min till the raw smell of the powders goes off.

Step 3

Add the chopped Brinjal pieces to this and the required salt. Mix everything. Close the lid and let it cook for 10 min.

Step 4

Open the lid and finally add some curry leaves. Spicy hot Brinjal curry is ready to serve. Have it with Rotti or Plain Rice.
