Today I am presenting Ramadan Special, Fried Idiyappam Recipe / പൊരിച്ച ഇടിയപ്പം. It is the fried version of idiyappam which can be served also as snacks. Everyone especially keralites are very familiar about idiyappam(rice noodles, nool appam, sevai), which is a very healthy and nutritious dish.

The primary steps of fried idiyappam is as same as that of common idiyappam. We have to be extreme cautious in adding water to the rice flour. Too much adding water will spoil the dough and the dough become so sticky. So add water a little by little till it reach the required texture and knead into dough. Finally you will need a idiyappam maker(sevai nazhi) to make idiyappam from the dough.

Ingredients

  • Rice flour - 2 cups
  • Boiling water - 2 1/4 cups
  • Grated coconut - 1⁄2 cup
  • Salt to taste
  • Coconut oil - 1 cup
  • Water - 3 cups

Method

Step 1

Boil water adding some salt.

Step 2

Pour the boiling water into the rice flour and mix thoroughly by stirring continuously. Add water till the dough come together. Knead well until the dough becomes soft.

Step 3

Grease the idly moulds with coconut oil. Sprinkle grated coconut on these moulds. Take small portions of dough and press the dough through Idiyappam maker into the greased idly moulds.

Step 4

Heat 3 cups of water in a steamer. Once the water starts boiling in the steamer, place the idly moulds and steam for 9 minutes on a medium flame.

Step 5

Keep the steamer closed for two minutes.

Step 6

Transfer the cooked Idiyappam to a plate and cool for 5 minutes.

Step 7

Spread them on a plate and dry them under the sun for 2 days.

Step 8

Heat coconut oil in a pan and fry the dried idiyappams until golden on both sides. Remove it into a paper towel to drain off the excess oil.

Step 9

Tasty Fried Idiyappam is ready.
