Kovakka Pickle Recipe

Kovakka Pickle is a simple to make and instant pickle. A finger lickingly delicious spicy pickle made with Ivy Gourd. Kovakka is a store house of a range of vitamins and minerals. Apart from that it also offers a decent amount of protein and fibers.

Ivy gourd contains a major content of Vitamin A which is essential for good eyesight and also a good source of Vitamin C which helps to prevent common cold and flu. In traditional medicine, this vegetable have been used to treat Leprosy, Fever, Asthma, Bronchitis and Jaundice.

Ingredients

  • Kovakka / Ivy Gourd - 1/2 kg ( sliced )
  • Kashmiri chilli powder - 1 tbsp
  • Turmeric powder - 1/4 tsp
  • Asafoetida powder - 1/4 tsp
  • Mustard seeds - 1/ 2 tsp
  • Fenugreek powder - 1/4 tsp
  • Sesame oil - 4 tbsp
  • Vinegar - 4 tsp
  • Water - 100 ml
  • Curry leaves - 1 sprig
  • Salt to taste

Method

Step 1

Wash kovakka and cut it into round shape.

Step 2

Heat 3 tbsp of sesame oil in a pan and shallow fry the sliced kovakka along with salt. Keep aside.

Step 3

In another pan, heat the remaining 1 tbsp oil and splutter the mustard seeds.

Step 4

Then add curry leaves, asafoetida powder, fenugreek powder, turmeric powder and chilly powder into it and saute for 2 minutes on a low flame.

Step 5

Add kovakka, vinegar and water into it and cook for 5 minutes on a low flame. Switch off the flame.

Step 6

Tasty Kovakka Pickle is ready.
