Long Beans Stir Fry – Achinga Payar Mezhukkupuratti is one of my husband’s favourite vegetarian dish.  Whenever he goes to the vegetable shop he never forgets to pick his favourite vegetable. I too love this dish for its  simple taste and easiness to make.

Ingredients

  • Long Beans Stir Fry/Achinga payar - 1/2 Kg cut into 1" long piece
  • Water
  • Turmeric powder - 1/2 tspn
  • Green chilly - 2 split into two
  • Curry leaves
  • Salt
  • Coconut oil - 2tbspn
  • Shallots crushed/ chopped - 7 nos
  • Red chilli flakes - 1/2 tspn
  • Curry leaves

Method

Step 1

In a cooking vessel add long beans/achinga payar with enough water, salt, turmeric powder, green chillies and curry leaves. Cover with lid and cook for 5 - 10 minutes.

Step 2

Open the lid and If there is excess water uncover it and keep on low flame so that the water evaporates.

Step 3

Now heat coconut oil in a pan, add crushed shallots. Saute till it turns light brown. Now add red chilly flakes and a few curry leaves.

Step 4

Add cooked long beans/achinga payar to this, mix everything well. Saute for a couple of minutes on low flame. Tasty Long Beans Stir Fry/Achinga payar is ready! Serve hot with plain rice!
