Mango Potato Cucumber Salad

Mango Potato Cucumber Salad

Mango Potato Cucumber Salad is a spicy mix of vegetables combined with sweetness of mango. It is a healthy and tasty mixed salad that can be prepared just within 10 minutes.

Salads composed from a few ingredients but it make a nutrient-rich meal. Researchers have noted a link between eating lots of fruits and vegetables and lower risks of many diseases. Many salad ingredients contain vitamin C and vitamin A in the form of antioxidant carotenoids.

Ingredients

  • Potatoes - 5 nos (boiled)
  • Mangoes - 2 nos
  • Orange Juice - 1/4 cup
  • Fresh Lemon Juice - 2 tbsp
  • Red Bell Pepper - 1/2
  • Cucumbers - 2 nos
  • Green Bell Pepper - 1/2
  • Ginger - 2 tbsp (minced)
  • Mint Leaves - 1/4 cup (chopped)
  • Cinnamon - 1 tbsp
  • Paprika - 2 tbsp
  • Powdered Mustard Seeds - 1 tsp
  • Cumin Seeds - 2 tbsp
  • Ground Black Pepper - 1/4 tsp
  • Salt to taste

Method

Step 1

Place the cumin, paprika, coriander, black cardamom, ginger, cinnamon and mustard in a small pan and heat over medium heat until the first tiny wisp of smoke appears.

Step 2

Allow to cool and then grind in a grinder. Keep it aside.

Step 3

Peel the cucumbers, cut them into half lengthwise and cut the halves into half-inch slices.

Step 4

Peel and pit the mangoes and cut the flesh into bite-sized chunks.

Step 5

Cut the red and green bell peppers into thin strips.

Step 6

In a large bowl, combine the potatoes, cucumbers, mangoes and bell pepper.

Step 7

Add the orange juice, ginger, lemon juice, mint and 1 tablespoon of the spice mixture.

Step 8

Toss well, season to taste with salt and pepper, toss again and serve.

Step 9

Tasty Mango Potato Cucumber Salad is ready.
