Mutton Rogan Josh is a signature recipe of Kashmiri cuisine which derives its name from red Kashmiri Chillies. It is a spicy curry brimming with flavours of Cinnamon, Bay Leaf, Cardamom, Cloves etc. This curry taste best when served with hot steamed Rice, Paratha etc.

Goat Meat is loaded with all the required healthy nutrients for the body in high amounts. It contains B group vitamins (B1, B2, B3, B9, B12), vitamin E, vitamin K, choline, protein etc.

Ingredients

  • Mutton - 500 gm
  • Onion - 2 nos
  • Cinnamon Stick - 1 piece
  • Bay Leaf - 1
  • Cardamom Pods - 2 nos
  • Cloves - 2 nos
  • Cumin Seeds - 1 tsp
  • Tomato - 2
  • Ginger Garlic Paste - 2 tbs
  • Kashmiri Red Chilly Powder - 1 tsp
  • Turmeric Powder - 1/4 tsp
  • Coriander Powder - 2 tbs
  • Green Chilly - 2 nos
  • Garam Masala - 1 tbs
  • Yogurt - 1/4 cup
  • Water - 2 cup
  • Vegetable Oil - 4 tbsp
  • Salt to taste

Method

Step 1

Heat a pan and add vegetable oil and splutter cumin seeds. Then add cinnamon, cloves, cardamom, bay leaf and stir for few seconds.

Step 2

Add chopped onions and green chilly into it and saute until onions becomes soft. Add ginger garlic paste into it and stir again.

Step 3

Add kashmiri red chilly powder, turmeric powder, coriander powder, garam masala and stir until the raw smell goes. Add the mutton pieces into it and fry for few minutes until the meat turns little brown.

Step 4

Add finely chopped tomatoes and water into it. Stir for few minutes until the tomatoes get mashed.

Step 5

Finally add yogurt, salt and cook it uncovered for 5 minutes. When it is about to boil, simmer it and cook it on a low flame by stirring occasionally until the meat is well cooked.

Step 6

Switch off the flame.

Step 7

Tasty Mutton Rogan Josh is ready.
