Nithyavazhuthana Stir Fry is a simple, quick and delicious dish that goes well with rice. I tried this recipe at my kitchen for the first time and i realized that it is a variety stir fry..

Clove bean is a crop that can be grown throughout the year. Hence it is called ‘Nithya Vazhuthana’ in Malayalam. It is a vine plant with small bunches of fruits. Tender fruits are used for cooking. The fruit are with long pedicels and swollen tips like bulb. The fruits contain fiber, vitamin C, potassium and calcium. Powdered clove bean are known as remedy for fever. Plants juice is sprayed to kill bugs. Tender fruits are used for cooking. The fruits are prepared into tasty curries same as brinjal.

Ingredients

  • Nithyavazhuthananga (clove beans) - 1/2 kg
  • Turmeric powder - 1/4 tsp
  • Dry red chilly - 5 nos
  • Shallots - 4 nos
  • Mustard seeds - 1/4 tsp
  • Curry leaves - 2 strings
  • Coconut oil - 4 tsp
  • Salt to taste

Method

Step 1

Clean and wash the nithya vazhuthananga. Remove the white part and chop the green part of it length wise.

Step 2

Grind shallots and dry red chilly using a mixer grinder.

Step 3

Heat coconut oil in a pan, splutter the mustard seeds and curry leaves. Add ground shallots and dry red chilly into it and saute until a lovely aroma comes. Saute for 2 minutes.

Step 4

Add chopped nithya vazhuthananga pieces, turmeric powder, and mix well. Close with a lid and let it cook on low flame for 8 minutes. Stir it occasionally.

Step 5

Open the lid and stir-fry for a couple of minutes. Switch off the flame. Tasty Nithyavazhuthananga Stir Fry is ready.
