Puttu – steamed rice cake layered with coconut is the traditional breakfast item in Kerala, Southern most state of India. Puttu can be otherwise explained as steamed cylinders of rice powder layeredย with coconut.
There are a variety of side dish combination for Puttu. Puttu & Banana, Puttu & Kadala (chick pea curry), Puttu & Kerala Fish Curry, Puttu & Chicken curry, Puttu, Cherupayar Thoran (Green Gram Stir
Fry) & Pappad etc. My hubby has discovered another yummy combination of Puttu with ripe mango.
The beauty of the dish is not only in its taste but also the easiness to prepare!
To steam Puttu in a cylindrical shape you need a Puttu maker or Puttu Kutti.
The Puttu Maker has 2 parts: Puttu Kudam (Pot in which water is boiled) and Puttu Kutti (cylindrical steamer kept over the pot)
Ingredients
- 2 cup Rice Powder
- 1/2 cup water
- Grated coconut 1 cup
- Salt to taste
Method
Step 1
First step is to wet the rice powder with water mixed with enough salt.Wet the Puttu with your hands by adding water little by little so that there are no lumps. I have another easier way to wet and remove the lumps which will help making soft Puttu. You can heat water and mix in rice powder with a spoon and blend the wet rice powder in the blender to remove lumps. Notes: To check the wetness/moistness of the puttu mix, just press the moistened/wet flour and see if they hold together.
Step 2
Keep your Puttu maker on the flame, so that the water poured in the Pot (puttu kudam) starts evaporating.
Step 3
Now you can start filling the steamer (Puttu Kutti).
Step 4
We have to first put 1 tbsp grated coconut and then 6 tbsp wet rice powder and again 1 tbsp grated coconut. Like this, layer the Puttu in steamer. Note: do not Press the layered items firmly in the steamer. If pressed firm steam will not be able to pass through the layers and Puttu will not be cooked properly.
Step 5
Keep the steamer (Puttu Kutti) on pot (Puttu Kudam) and allow to steam for 5 minutes.
Step 6
When steam starts coming from top of the steamer, you can understand that the Puttu is cooked well and ready to serve.
Step 7
Take out the steamer from the pot. By pressing behind the steamer with a long rod take the Puttu out and serve with your choice of combination curries.
