Rice Balls / Ari undda is a common teatime snack in kerala. It is very delicious and easy to cook. It has a wonderful aroma of roasted rice.
Ingredients
- Rice - 2 cup (kuthari)
- Jaggery - 1 cup
- Grated coconut - 1 cup
- Roasted cashewnut - 2tsp (powdered)
- Cardamom - 1/2 tsp (powdered)
- Water - 1/4 cup
Method
Step 1
Clean the rice with water and strain.
Step 2
Heat a pan dry roast the rice till it is brown and crispy for 10 minutes.Grind it in to a fine powder. Grind the cashew nut.
Step 3
Heat a pan melt jaggery with 1/4 cup of water and strain to remove impurities. Then heat the jaggery for 2 minutes.
Step 4
Add rice powder, cardamom powder, cashew nut powder and grated coconut into the jaggery and mix well.
Step 5
Make small balls with this mixture. Ari undda is ready.
