Ingredients
- Rose apple (chambakka, ചാമ്പക്ക) - 250 gm
- Ginger - 1 piece (chopped)
- Garlic - 6 cloves
- Green chilly - 3 nos
- Red chilly powder - 2 tsp
- Fenugreek powder - 1/4 tsp
- Asafoetida powder - 1/4 tsp
- Mustard seeds - 1/2 tsp
- Vinegar - 5 tsp
- Curry leaves - a few
- Gingelly oil - 4 tbsp
- Salt to taste
Method
Step 1
Wash the rose apples (chambakka, ചാമ്പക്ക) well with water. Cut into halves, deseed and set aside.
Step 2
Heat gingelly oil in a pan and add mustard seeds. While the seeds splutter, add chopped garlic, curry leaves, chopped green chilly and chopped ginger. Saute for 3 minutes.
Step 3
Add the rose apple slices. Saute well for 5 minutes. Reduce the flame and add red chilly powder, asafoetida powder, fenugreek powder, salt and vinegar. Saute for 3 minutes on a low flame.
Step 4
Switch off the flame and allow to cool.
Step 5
Tasty Rose Apple Pickle is ready.
