Sarkara Varatti is a very popular Sweet Dish of Kerala Sadhya. Sarkara Varatti is also known as ”Sarkkara Upperi” or ”Jaggery Coated Banana Chips”. Sarkara Varatti is prepared by chopping bananas into thick pieces, deep fried and then mixed into melted jaggery.

For the sadhya Sarkara Varatti is a must side dish. These days because of the unawareness of how to prepare Sarkkara Upperi, people just buy it from the shop. This time, lets have some difference and prepare it at home. This way you will get good quality Sarkkara Upperi for sadhya.

Ingredients

  • Raw Plantain (pacha ethakka) - 2 medium
  • Jaggery (sarkara) - 250 gm
  • Ground dried ginger (chukkupodi) -1/2 tsp
  • Grond cardamaom (elakka podi) -1/2 tsp
  • Rice flour - 2 tsp
  • Water - 1/2 cup
  • Coconut oil - 2 cup

Method

Step 1

Peel the banana. Slit the banana lengthwise and cut it into 1/4" pieces.

Step 2

Heat coconut oil in a pan. Add the plantain pieces and fry until it is crispy. Transfer the fried pieces in to a tissue paper and let it cool.

Step 3

In a thick bottomed pan heat jaggery and 1/2 cup of water till jaggery melts. Strain this to removes any impurities.

Step 4

Now reheat the strained syrup on a low to medium heat, stirring frequently till it reaches a thick consistency. Remove from heat and add the dried ginger and cardamom powder to them and mix well

Step 5

Add the fried and cooled plantain pieces into the jaggery syrup and mix well. Finally just sprinkle the rice flour.
