This is a hard boiled egg recipe. The eggs are fried in oil and the sweet and tangy sauce is poured over it. The eggs, removing the shells are first fried without cutting because if we cut the eggs and fried, there may be a chance that the yellow yolks blasts and ends in mess.

Ingredients

  • Boiled eggs - 2 nos
  • Big shallots - 1 nos (finely shredded)
  • Fish sauce - 1/2 tbsp
  • Palm sugar - 1 tbsp
  • Tamarind juice - 2 tbsp (from about a small ping pong ball size of tamarind)
  • Garlic - 1 clove (minced)
  • Dried chilly flakes - 1 teaspoon
  • Ground peanut - 1 tablespoon
  • Vegetable oil - For deep frying
  • Cilantro - For garnishing

Method

Step 1

Heat a kadai and pour some vegetable oil. Deep fry the eggs until the skin turns brown. Slice the fried eggs into halves.

Step 2

Arrange the fried eggs in a plate.

Step 3

Deep fry the shredded shallots until golden brown and place the eggs on a paper towel to absorb the excess oil.

Step 4

Heat a sauce pan, pour some oil and saute the minced garlic until it changes to light brown. Add the dried chilly flakes, ground peanut. Add tamarind juice, palm sugar and fish sauce. Stir continuously.

Step 5

Bring it to boil and pour the sauce on top of the fried eggs.

Step 6

Top it with fried shallots and cilantro. Serve hot with steamed white rice.
