Ingredients
Heat a kadai and pour some vegetable oil. Deep fry the eggs until the skin turns brown. Slice the fried eggs into halves. Arrange the fried eggs in a plate. Deep fry the shredded shallots until golden brown and place the eggs on a paper towel to absorb the excess oil. Heat a sauce pan, pour some oil and saute the minced garlic until it changes to light brown. Add the dried chilly flakes, ground peanut. Add tamarind juice, palm sugar and fish sauce. Stir continuously. Bring it to boil and pour the sauce on top of the fried eggs. Top it with fried shallots and cilantro. Serve hot with steamed white rice.
