Spanish Omelette or Tortilla de patatas (as this dish is know in Spain) is basically a potato omelette. It is popular all over Spain and often served in bars and is eaten either hot or cold. It is a very simple and tasty recipe.
Eggs are a good source of essential minerals such as Calcium, Iron, Phosphorus, Zinc and Iodine. Eggs are rich in vitamin B, especially vitamin b12, vitamin A, vitamin D, vitamin E and vitamin K.

Ingredients
- Egg - 6 nos
- Onion - 2 nos ( sliced )
- Potatoes - 2 nos ( peeled and thinly sliced )
- Pepper powder - 1 tsp
- Olive oil - 50 ml
- Salt to taste
Method
Step 1
Clean potatoes and onion and slice thinly.
Step 2
In a frying pan, heat olive oil over medium heat. Sprinkle potatoes lightly with salt and pepper. Cook until golden brown and crisp.
Step 3
Once the potatoes are golden, add onions. Cook on a medium flame stirring occasionally, until onions soften and begin to brown. Drain the onion and potato in a colander to get rid of the excess oil.
Step 4
Beat eggs together with salt and pepper. Add potatoes and onion into the beaten egg and mix well and check seasoning. .
Step 5
Heat a little oil in a frying pan on a moderate heat. Pour the potatoes, onion, egg mix and cook. Once the bottom of the omelette has set, turn the heat down low and cover the pan. Reduce heat to low and cook until eggs begin to brown on the bottom.
Step 6
After 5 minutes, turn the omelette by placing a flat plate on the frying pan and quickly turning over. Gently slide the omelette back into the frying pan and continue frying the uncooked side down.
Step 7
Cook until eggs are set. Switch off the flame.
Step 8
Tasty Spanish Omelette is ready. Garnish omelet and serve warm.
