Steamed Chicken Pathiri Recipe is a traditional North Kerala, Malabar recipe. Kozhi Pathiri is one of the star Malabar dishes.
It is a meat stuffed rice bread that is steamed. In this recipe we are using very less amount of oil only for cooking chicken, which is stuffed inside the rice dumplings.

Ingredients
- Rice flour - 1 cup ( 200 gm )
- Water - 1 1/2 cup ( 250 ml )
- Salt to taste
- For the filling : -
- Chicken - 250 gms
- Onion - 2 nos ( chopped )
- Ginger garlic paste - 1 tsp
- Green chillies - 2 nos ( chopped )
- Red chilly powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Coriander powder - 1/2 tsp
- Pepper powder - 1 tsp
- Garam masala - 1/4 tsp
- Curry leaves - few ( chopped )
- Coriander leaves - few sprigs ( chopped )
- Coconut oil - 4 tsp
- Water - 4 tbsp
- Salt to taste
Method
Step 1
Clean and wash the chicken pieces.
Step 2
Take a pressure cooker and boil the chicken along with 1/2 teaspoon of chilly powder, 1/4 teaspoon of turmeric powder, water and salt.
Step 3
Once the chicken is done, switch off the flame and let it cool. Shred the chicken and keep aside.
Step 4
Heat coconut oil in a pan and add ginger garlic paste, green chillies and saute well.
Step 5
Add chopped onion into it and cook for 4 minutes on a low flame.
Step 6
Add turmeric powder, red chili powder, pepper powder, garam masala and coriander powder into it and mix well.
Step 7
Add the shredded chicken, chopped coriander leaves, curry leaves and salt into it. Mix well and cook for 3 minutes. The filling is ready.
Step 8
Boil 1 1/2 cup of water with salt. Pour the hot water to the rice flour little by little and mix it with a spoon. Keep it aside till it is warm enough to handle.
Step 9
Knead the dough and make it into a soft ball.
Step 10
Take some dough and make a small ball out of it ( like for chapathi ). Divide it into two portions. Roll it out to two thick pathiries.
Step 11
Place filling at the center of a pathiri and place another rolled out pathiri over it and gently press the edges together.
Step 12
Heat an appa chembu or a steamer. Place this in a steamer and steam for about 10 minutes on medium flame. After 10 minutes, switch off the flame. Keep it covered for 5 minutes. Open the steamer after 5 minutes.
Step 13
Cut pathiri into small pieces. Serve hot.
Step 14
