Vendakka Mezhukkupuratti / Ladies Finger Stir Fry / Kerala Homemade Recipe / വെണ്ടക്ക മെഴുക്കുപുരട്ടി is a tasty and healthy side dish for Rice. It is very easy to prepare and requires very few ingredients, mainly Vendakka, Green Chilly and Shallots.
A single cup of raw Ladies Finger contains about 3 grams of dietary fiber, 2 grams of protein, 7.6 grams of carbohydrates, 0.1 grams of fat, 21 milligrams of vitamin C, around 88 micrograms of folate, and 57 milligrams of magnesium. It helps to prevent Cancer, Heart Disease and also improves Immunity and Mental Function.

Ingredients
- Vendakka / Ladies Finger - 1/2 kg
- Green Chilly - 5 nos (chopped)
- Shallots - 6 nos (chopped)
- Red Chilly Powder - 1/4 tsp
- Coconut Oil - 5 tbsp
- Curry Leaves - 1 string
- Salt to taste
Method
Step 1
Wash vendakka (Ladies Finger) well with water. Remove its head and tail and cut it into small pieces.
Step 2
Heat coconut oil in a pan and add curry leaves, chopped shallots, green chilly and saute well for 3 minutes.
Step 3
Add chopped vendakka, red chilly powder and salt into it and mix everything very well. Cover and cook on a low flame for 5 minutes. Do stir in between.
Step 4
After 5 minutes, open the lid and stir continuously until the vendakka becomes crispy.
Step 5
Tasty Vendakka Mezhukkupuratti is ready.
