Ingredients
- Kaima rice or Basmati rice - 200 gm ( 2 cup )
- Grated coconut - 200 gm ( 2 cup )
- Green chilly - 5 nos
- Red chilly powder - 3 tsp
- Shallots - 6 nos
- Ginger - 1 small piece ( chopped )
- Tamarind ( Valan Puli ) - 10 gm ( Size of a small gooseberry )
- Boiled water - 300 ml ( 3 cup )
- Mustard seeds - 1/2 tsp
- Dry red chilly - 4 nos
- Cococnut oil - 4 tbsp
- Curry leaves - 2 strings
- Water - 2 tbsp
- Salt to taste
Method
Step 1
Wash and soak the raw rice in water for 5 minutes and drain the excess water.
Step 2
For making coconut chammanthi, take mixer grinder and add grated coconut, green chilly, red chilly powder, shallots, ginger, tamarind, water, salt and grind to a smooth paste. Keep it aside.
Step 3
Heat coconut oil in a pressure cooker and add mustard seeds, dry red chilly, curry leaves and fry for 2 minutes on a low flame.
Step 4
Add coconut chammanthi into it and mix well. Cook this on a low flame for 4 minutes.
Step 5
Add kaima rice to this and stir well. Then add 3 cups of water, salt and allow it to boil. Close the lid and cook for 2 whistles. Reduce the flame and cook for 5 minutes. Switch off the flame.
Step 6
Tasty Chammanthi Rice is ready.
