Gooseberry wine is one of the special wine recipe during Christmas. It is very tasty and can be stored for years. A Christmas is not completed without the traditional wine. So this is one of the wine can be easily prepare at home with less ingredients.

Gooseberry is A.K.A Amla and ‘nellikka’ in malayalam language. It is high in medicinal value and at the same time it good for the health of hair, skin and eyes.

Gooseberry wine recipe | Christmas special wine recipe

Ingredients

  • Nellikka ( Indian Gooseberry or Amla ) - 2 kg
  • Jaggery - 2 kg
  • Raisins (black) - 100g
  • Cloves - 4 nos
  • Cardamom - 4nos
  • Black pepper powder - 1 tsp
  • Water - 6 cups

Method

Step 1

Make a fine powder of cloves, cardamom, cinnamon and pepper using a mixer grinder. Then crush the jaggery using the same mixer grinder and keep it aside.

Step 2

Wash the gooseberries and dry off by spreading it on a cloth for some time.

Step 3

In a porcelain or glass airtight jar (do not use steel or plastic containers) add one layer of gooseberries. On the top of this add one portion of crushed jaggery, the fine powder of cloves, cardamom, cinnamon and pepper then add raisins. Repeat this till all the ingredients are finished. Add water at the end. Cover the lid with a cloth.

Step 4

Next day, open the jar and stir well using a wooden spatula and cover the lid. Continue this for 2 more days.

Step 5

After 3 days, this airtight container should be stored in a dark place.

Step 6

After 41 days open the jar and strain the mix to get the liquid. Do not squeeze the gooseberries. The gooseberry wine will be black in colour.

Step 7

This wine can be stored for years.
