Nan khata originated in Surat, a large port city in Gujarat, India. Nan Khata is a popular delicate and melt-in-mouth Indian cookie.  Some historians assert that the name Nan khata reflects the recipe where Nan stands for bread, and Khat meaning six refers to the six ingredients.

Nan Khata is a shortbread cookie. It is made from flour, sugar, clarified butter and nuts.   It is usually served as a morning or afternoon snack with a cup of hot tea. Baked Nan Khata stays fresh up to 3 weeks at room temperature in air tight container.

Ingredients

  • Plain flour - 1 cup
  • Sugar - 1/2 cup (powdered)
  • Ghee - 1/2 cup
  • Cashew nuts - 3 tbsp
  • Cardamom powder - 1/4 tsp
  • Salt a pinch

Method

Step 1

Take a bowl and mix cardamom powder, salt with flour and sift once. Chop cashew nuts. .

Step 2

Heat a pan add ghee and powdered sugar and stir for 3 minutes until it is creamy. Add flour slowly in to this and mix with a spoon.

Step 3

Add chopped nuts and mix well. Using hands to bring this mixture together to a dough.

Step 4

Make around 20 small balls from the dough and place them on a baking sheet lined with baking paper spaced apart. Gently press the balls. Bake them for 15 minutes at 180ºC.

Step 5

The delicious Nan Khata is ready to be served.
