Ingredients

  • Besan / Gram flour (Chickpea flour) - 2 1/2 cups
  • Roasted rice flour -1 cup
  • Red chilly powder - 1 & 1/2 tsp
  • Asafoetida - 1/2 tsp
  • Water - 1 cup
  • Salt to taste
  • Curry leaves - a few sprigs
  • Vegetable oil - 3 cup

Method

Step 1

Take a bowl, mix besan flour, rice flour, chilli powder, asafoetida and salt,

Step 2

Add water little by little and knead it into a smooth dough. It might be a little sticky, apply a little bit of oil on to your palms to keep the dough from sticking. Keep aside.

Step 3

Take a idiappam press or mould with the Pakkavada plate in it. Add the dough in it and close.

Step 4

Heat sunflower oil in a frying pan. A medium high flame is essential for making Pakkavada. If the heat is too less it will absorb more oil and if too high it will burn. When the oil gets hot press the dough into the hot oil slowly in a circular motion. Fry the curry leaves and mix them with the pakkavadas.

Step 5

Fry until it gets golden brown in colour and drain them into a paper towel.

Step 6

Once the pakkavada gets little cool, break into pieces of desired length.

Step 7

Tasty Pakkavada is ready.
