Whenever I make this dish I think of my Father. My father is really a good cook. This dish is first made by him for my sister who is not at all a fan of this vegetable. She really liked the new taste and fell in love with this curry.
This a nice side dish for rice. So simple and easy to make.

Ingredients
- Snake Gourd - 250 gms
- Turmeric Powder - 1/2 tspn
- Salt
- Curry Leaves
- Green Chilly - 2 cut into two
- Coconut Oil - 2 tbspn
- Shallots - 7
- Red Chilly Powder/ Red Chilly Flakes - 1 tspn
- Egg - 2
Method
Step 1
Cut Snake gourd into small pieces and wash it well. Cook the Snake gourd adding enough water, turmeric powder, salt, curry leaves and green chilly. Cook for 5-6 minutes with lids closed.
Step 2
Heat oil in a pan. Add shallots and saute till it turns light brown. Now add red Chilly Powder. Saute till the raw smell goes off.
Step 3
Then add the eggs and scramble it well. Sprinkle some salt on it. Add it accordingly as you have already added salt to the Snake gourd.
Step 4
Now add the cooked Snake gourd to this and mix well with egg. Now season with some curry leaves and oil. Easy and tasty mezhukkupuratti is ready!
