Spicy Mutton Liver Roast / liver Varattiyathu is one of my mothers’s tasty recipe.

Enjoy with rice roti, wheat roti, all varieties of other breads and off-course steamed rice.

Ingredients

  • For gravy:
  • 1/2 kg mutton liver cut into small pieces
  • 5 tbsp coconut oil
  • 1 big potato clubbed
  • 2 onion chopped
  • 1 big tomato chopped
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 10 curry leaves
  • 2 tbsp coriander powder
  • 1/2 tbsp turmeric powder
  • 1/2 tbsp red chilli powder
  • 3/4 tbsp black pepper powder
  • 1/4 tbsp fennel seed powder
  • 1/4 tbsp garam masala powder
  • Salt to taste
  • For seasoning:
  • 2 tbsp coconut oil
  • 6 shallots chopped
  • 10 curry leaves
  • 2 cardomom
  • 2 cloves
  • Small piece cinnamon

Method

Step 1

Sauté all the gravy ingredients together in a pressure cooker until the gravy turns translucent and dark brown color.

Step 2

Add mutton liver to this gravy, mix well and add 1/2 cup water. Then close the lid and allow to cook in pressure cooker for 10 to 15 minutes in low flame.

Step 3

After 15 minutes switch of the flame and allow the pressure cooker to cool for 10 minutes.

Step 4

Open the lid and evaporate the extra water and make the gravy thick.

Step 5

Then for seasoning, sauté shallots in coconut oil till golden brown. Add cardamom, cloves, cinnamon and curry leaves to shallots and stir for 10 seconds.

Step 6

Add the seasoning to the mutton liver gravy and our Spicy Mutton Liver Roast (Mutton Liver Varattiyathu) is ready to eat. Serve hot!!!
