Ingredients
Wash and soak the raw rice in water for 5 minutes and drain the excess water. Heat oil in a vessel or pressure cooker and add the curry leaves, sliced onions, green chillies, cloves, cinnamon and cardamoms then stir fry for 5 minutes. Add ginger garlic paste and saute for 3 minutes. Add chopped tomatoes, mint leaves, coriander leaves, salt, red chilly powder, cumin powder and cook for 6 minutes. Reduce the heat then add the basmati rice and mix well. Add 2 cups of water and allow it to boil. Reduce the flame and cook till the rice is well cooked. If you wish to cook the rice using a pressure cooker, close the lid and cook for 3 whistles. Switch off the flame. Tasty Tomato Rice is ready. Pour the tomato rice into a serving bowl. Garnish with fresh coriander leaves. Method
