Ingredients
- Basmati rice - 1 cup
- Onion - 1 nos ( finely sliced )
- Green chillies - 3 nos ( chopped )
- Ginger garlic paste - 1 tsp
- Tomatoes - 3 nos ( chopped )
- Cloves - 4 nos
- Cinnamon stick - 1 piece
- Cardamoms - 2 nos
- Red chilli powder - 1 tsp
- Cumin Powder - pinch
- Water - 2 cup
- Vegetable oil - 3 tbsp
- Coriander leaves - 2 strig
- Mint leaves - 5 nos
- Curry leaves - 1 strig
- Salt to taste
Method
Step 1
Wash and soak the raw rice in water for 5 minutes and drain the excess water.
Step 2
Heat oil in a vessel or pressure cooker and add the curry leaves, sliced onions, green chillies, cloves, cinnamon and cardamoms then stir fry for 5 minutes.
Step 3
Add ginger garlic paste and saute for 3 minutes. Add chopped tomatoes, mint leaves, coriander leaves, salt, red chilly powder, cumin powder and cook for 6 minutes.
Step 4
Reduce the heat then add the basmati rice and mix well.
Step 5
Add 2 cups of water and allow it to boil. Reduce the flame and cook till the rice is well cooked. If you wish to cook the rice using a pressure cooker, close the lid and cook for 3 whistles. Switch off the flame.
Step 6
Tasty Tomato Rice is ready.
Step 7
Pour the tomato rice into a serving bowl. Garnish with fresh coriander leaves.
