Vendakka pachadi | വെണ്ടയ്ക്ക പച്ചടി | Lady Finger pachadi

Vendakka Pachadi or Lady Finger pachadi is prepared by frying the lady’s finger till it become crisp and then it is mixed with curd and grated coconut. Vendakka Pachadi is a healthy side dish and easy to prepare within minutes.
Pachadi and kichadi is made from different vegetables and fruits like ginger, cucumber, pineapple, lady’s finger, bitter gourd.

Difference between Pachadi and kichadi  is:

  • Yogurt coconut mixture is used in pachadi along with vegetables 
  • Only yogurt is in used in kichadi with vegetables 

Vendakka / Ladies Finger (AKA Okra) is a good source of Vitamin B, K,  Potassium, etc. Vendakka helps to prevent the diseases like anemia, cholesterol, cancer, asthma, diabetes and also good for bones.

Pachadi and kichadi is an essential side dish at any Kerala sadya such as Onam Sadya. Try this recipe for this Onam sadya and enjoy the taste.

Ingredients

  • Vendakka / Ladies finger – 10 nos
  • Green chilly – 5 nos (chopped)
  • Grated coconut – 1 cup
  • Curd / Yogurt – 2 cups
  • Cumin Seeds / Jeere - 1 tsp
  • Mustard seeds - 1/4 tsp
  • Shallots – 4 nos
  • For Seasoning : Mustard Seeds – 1/4 tsp
  • Dry red chillies – 2 nos
  • Curry leaves – 1 stem
  • Coconut oil - 4 tsp
  • Salt to taste
                                  

Method

Step 1

Clean the ladies finger with water and slice into thin round pieces.

Step 2

In a grinder grind grated coconut, shallots, cumin seeds and curd together to a fine paste. When it is almost done, add mustard seeds to get crushed.

Step 3

Heat coconut oil in a pan and fry sliced ladies finger and chopped green chillies. Add curd, coconut mix and salt.

Step 4

Heat coconut oil in a pan and add mustard seeds, when it starts spluttering (കടുക് പൊട്ടിയതിനു ശേഷം) add dried red chillies and curry leaves. Pour this on the top of pachadi.

Step 5

Tasty pachadi is ready to be served as a side dish with rice.
