Vishu is a important festival in Kerala. Vishu Kanji is a special traditional dish prepared on the day of vishu. It is served as breakfast after seeing vishu kani early in the morning. It is important for many on Vishu.

Vishu kanji is a tasty and healthy porridge. It is a traditional practice in Kerala on vishu. Coconut milk is added to make it more delicious. It is very easy to make and is slightly different from that of usual one. The butter beans added in the porridge makes it more nutritious and healthy.

Ingredients

  • Parboiled rice (Puzhungalari) - 1/2 cup
  • Raw rice (Pachari) - 1/2 cup
  • Butter beans ( Amarapayar ) - 1/4 cup
  • Coconut milk - 2 cups
  • Grated coconut - 1/4 cup
  • Salt to taste
  • Water - 6 cups

Method

Step 1

Roast butter beans for 5 minutes in a pan.

Step 2

Wash raw rice, parboiled rice under water until the water runs clear and cook them separately with 3 cups of water until rice becomes very soft in a pressure cooker.

Step 3

When both rice are cooked, mix them well and set aside.

Step 4

Cook the roasted butter beans with 1 cup of thick coconut milk in a pressure cooker.

Step 5

Add the cooked beans along with 1 cup of coconut milk and salt to the rice and cook again for 5 minutes.

Step 6

Add the grated coconut before serving and stir gently .

Step 7

Tasty Vishu Kanji is ready.
